So this salad I learnt from Kay, and is such an easy and filling meal. I don't really like vegetables, so this is a great alternative for me as it is made mostly of fruit, with a few leaves of spinach, a great source of iron. I also make the salad dressing from scratch, so this is more a less very healthy salad as there isn't any horrid hidden ingredients in the salad dressing.
This basically contains 5 of your 5-a-day. So you're sorted!
It takes me a while to eat, since there is so much of it, but fills me up for hours.
For those of you who do not like leaves, neither do I, but along with the other things in here, you can barely taste it. Also, it is better to get organic spinach, and if not then baby spinach, as normal spinach tastes like dirt and can ruin the taste of the salad.
And the radish along with the green apple is simply divine!

Ingredients needed for salad:
Cucumber
6-8 Radish
Mango
Baby or Organic Spinach
2 Gala Apples (Green)
For salad dressing:
2 Lemons
A couple of Chilies
Extra Virgin Olive Oil
Salt
Black Pepper
To make:
Just cut all the fruits, I like to leave the skin on them, minus the mango.
I like to cut the cucumber and radish into circles, the apples into triangles, and the mango into squares. Just put it all into a bowl along with a handful of spinach leaves.


Start off with lemons, cut them in half, and using a fork as help, squeeze out all the juice into a bowl. I normally use one, but these lemons were smaller and so I used two.
Next are the chilies. Now I agree chilies are not for everyone, and even for those who like it, I sometimes go a little extreme with them. Love my chilies!
Use a double handed curved knife and chopping board to cut the chilies finely, and add it into the bowl.
Now add a dash of olive oil, salt and pepper, according to personal tastes - I like lots of salt in my food - and mix it well.
Add the dressing into the salad, and toss the salad to mix it all. I sometimes hold the chopping board over as to not get salad dressing everywhere.
Well, that's it really.
Add anything else to the salad that you want.
Remember, it's not a diet, its lifestyle change. The easiest way to eat healthily is to ensure you enjoy it.

They're not the best tasting vegetable in my opinion which is why in this salad it is masked by the other yummy stuff so you can't taste it :)
