Coleslaw is a popular side dish in Western Diets often accompanied by the KFC type meal. Made up of shredded cabbage and grated carrots (so far so great) it is a laden with mayonnaise which just ups the calorie content a lot without adding much to the nutritional content. This is my take on this side dish which tastse super yummy and great for those of you who are looking for a healthier alternative.
Shredded Cabbage ( I used white and purple)
Salt and Pepper per taste
A chilli for some kick
2 tablespoon Fat Free Greek Yoghurt (adjust as you feel appropriate)
Juice from half a Lemon
Toss all in a bowl and serve.
Only managed to grab a quick picture on my phone before dinner and it was all finished by the end. The sign of a great tasting dish as there's a great expolision of taste in your mouth, the tangy liquid from the yoghurt and lemon and the crunchiness of the vegetables! This is also an easy way of adding some raw vegetables to your diet as you can shred and slice anything you like!
