- This loaf is so beautiful to look at, but you do need a hot drink to go with it coz it is a loaf and not a cake :)
- Tea or coffee would be a beautiful accompaniment with a slice as it's not too sweet. This is a good old fashioned baking that you can beat with a wooden spoon in a bowl. Love!
- Grab:
- 1 large egg
- 200g (1 cup) caster sugar
- 120ml (1/2 cup) vegetable oil
- 1 tsp vanilla extract
- 180ml (3/4 cup) raspberry yoghurt ( i blended some raspberries with yoghurt in the blender)
- 290g (2.5 cups) self raising flour flour
- 1 tsp baking soda
- pinch of salt
- fresh raspberries
- 100 g (2/3) bowl of chopped white chocolate (I used chocolate drops so no need to chop)
- 50 g (1/3 cup) chopped white chocolate, melted
- a big bowl
- a wooden spoon
Method:
1. Mix the egg and sugar
2. Add the oil, vanilla extract and yoghurt and beat
3. Add the flour, baking soda and pinch of salt; add the flour a small amount at a time. Beat.
4. Mix in the white chocolate
5. Pour into a loaf tin; add your fresh raspberries into the batter randomly
6. Bake for ~50 mins or until a toothpick comes out clean when inserted
7. Once cooled, melt the 50 g of white chocolate and drizzle over your loaf
