Food Diaries | White Chocolate and Raspberry Loaf



  • This loaf is so beautiful to look at, but you do need a hot drink to go with it coz it is a loaf and not a cake :) 

  • Tea or coffee would be a beautiful accompaniment with a slice as it's not too sweet. This is a good old fashioned baking that you can beat with a wooden spoon in a bowl. Love! 


  • Grab: 
  • 1 large egg
  • 200g (1 cup) caster sugar 
  • 120ml (1/2 cup) vegetable oil
  • 1 tsp vanilla extract
  • 180ml (3/4 cup) raspberry yoghurt ( i blended some raspberries with yoghurt in the blender)
  • 290g (2.5 cups) self raising flour flour
  • 1 tsp baking soda
  • pinch of salt 
  • fresh raspberries 
  • 100 g (2/3) bowl of chopped white chocolate (I used chocolate drops so no need to chop)
  • 50 g (1/3 cup) chopped white chocolate, melted
  • a big bowl 
  • a wooden spoon 

Method: 
1. Mix the egg and sugar
2. Add the oil, vanilla extract and yoghurt and beat 
3. Add the flour, baking soda and pinch of salt; add the flour a small amount  at a time. Beat. 
4. Mix in the white chocolate 
5. Pour into a loaf tin; add your fresh raspberries into the batter randomly 
6. Bake for ~50 mins or until a toothpick comes out clean when inserted 
7. Once cooled, melt the 50 g  of white chocolate and drizzle over your loaf
